One of my many talents that doesn't require me to take my clothes off is altering media. I've versed myself in video and audio editing in many formats. Before most computers had DVD burners, I was converting movies I downloaded from P2P networks to VCD/SVCD, moved on to DVD, I even had a few hundred illegal video games at one point. Yes, I am a pirate.
Things have changed a great deal since the late 90's and early 2000's. Streaming sites like YouTube and ever-growing caches of disk space have made these skills nearly obsolete. Everything is a click or a small fee away. Lazy, lazy world... *Sigh*
What I'm about to give you is nearly foolproof and so simple, Kim Kardashian could do it. It IS NOT illegal. You're not stealing bandwith, you're using just as much as you would by streaming it. Half the shit on YT is violating copyrights by being there, they get away with it by citing Fair Use and can't argue that an MP3 is stealing when a cache file of the same size isn't. They can't win the argument, not to mention, they lost a lot of money the last time they called their customers thieves and sued them.
Anywho! Here are the best sites to use...
Convert Files
This one is multipurpose. It does video and audio and supports many codecs. The people who run it also have several side sites and apps for more specific use. The only downside is that they have a 250 MB file size limit. No full DVDs for you! It's relatively ad free and works quick most of the time.
Save From
This works just as well as Convert Files, if not better. It doesn't convert to MP3, but DOES do MP4 audio and video along with several others. It's compatible with nearly every major streaming site and some that aren't as well known.
Soundcloud Downloader
This is just to download MP3s from SoundCloud. It rips in 128 KBPS which kinda sucks for SC exclusives, but it's free, right?
All these sites are pretty self-explanatory and have instructions right there. These are all safe and nearly devoid of the advertising that most of these things require to exist. If you see apps and shit that are advertising that they DL from YouTube or whatever, just use these sites. If they're being advertised, they most likely contain Adware or worse. You don't want Kim Jong Uhn's Apple II hack squad stealing your naughty pics, do you?!
